I love chicken enchilada casserole. I don’t always make the sauce. I’ve used Trader Joe’s sauce and it’s easy. I also vary the beans and then veggies.

Okay, I made this recipe this afternoon. It is delicious!! I didn't have white wine so I substituted apple cider vinegar. For those who might ask - no, I cannot taste that at all.
This will go into rotation now. It is great AND easy.

You can spice it up by using the pre marinated chicken breasts from wegmans. We’ve done Buffalo, Italian, jerk and Peruvian and the each give the dish a different flavor.

If you like a little more spice, classic King Ranch Chicken is always good, but I love this mac n cheese version:

Got flamed for this in the other thread, but I think it can make you happy if you’re sad (and not feeling strict about health food for one meal (plus leftovers because there will be lots unless you’re feeding 6+):


Hot Chicken Salad

1 cup chopped almonds
2.5 cups chopped cooked chicken (I use rotisserie)
1.5 cups chopped celery
1 chopped shallot
1/2 tsp each salt & pepper
2 TBSP lemon juice
1 tsp mustard (I like Dijon)
1 TBSP chopped fresh tarragon
1 cup mayo
1/2 cup shredded cheese (pre-shredded is fine)

Preheat oven to 375.

Stir all ingredients together and transfer to a baking dish (9x9 will work) sprayed with cooking spray.
Once the chicken mixture is smoothed out, top with crushed up potato chips (I like onion flavoured ones, or plain, but anything that isn't a corn chip or strongly-flavoured will work).

Bake uncovered until bubbly ~ 20 minutes.

One of my favorites chicken casserole dishes is chicken tetrazzini.

Chicken lasagna, but you use cream cheese instead of ricotta. Carbs + cheese = love.

Monterey chicken casserole. Sour cream, salsa, chicken, corn, tortillas, cheddar and or Jack. Creamy and zesty and delicious.

Sour cream chicken enchiladas. Chicken, cream of mushroom, sour cream, onions, green chilies (optional), tons of cheese, wrapped in flour tortillas and baked. All those warm, soft flavors are so comforting.

Chicken rice broccoli cheese. Uncle Ben’s wild rice pilaf is the base. It has to be uncle Ben’s, there’s something about the seasoning that hits just right with broccoli and cheddar. Some recipes call for adding a can of French onion or cream of chicken soup. I like it basic, but both variations are yummy.

You know that viral feta tomato bake from a few years ago? Do it with Boursin instead of feta and put it over pasta with shredded rotisserie chicken. I guess that’s not a casserole, but it has that baked goodness!

Mmmmm, I love a good old school chicken casserole. My mom used to make one called “North Church chicken casserole”. I can’t find it online, but this is the closest I’ve found. Mayo and buttered cornflakes are the key.
