Breakfast for dinner, taco bar, pizza and salad.
I also use the instant pot for beans, Chana masala etc. It requires minimal work and doesn’t heat up the house at all.
We had peach Melbas this week with fruit we picked at a u-pick farm last week!

You really are a bad mom- the meatballs go in the toaster over with the nuggets and the broccoli steams in the microwave

Last night, I made a couscous salad with cherry tomatoes, pepperoncini, and smoked trout. Tonight, I’m making bulgur pilaf in the instant pot. Bean or grain salads are nice on hot weather.

We also live in an air conditioned house, but we do like to eat seasonally. That means in summer:

Cold soups
Salads
Meat and veg cooked on the barbeque
Fresh Fruit salads
Egg dishes (quiche baked in the morning and served at lunch)

Perdue chicken burgers in the air fryer last night. They take 8 mins. With salad for me and tomatoes/cucumbers/carrots for kids.

Salads with a mixture of greens or green beans, microwaved potatoes, cherry tomatoes, olives, beans, etc.

Grilled chicken or seafood

Salads with orzo, rice, pastas mixed with cucumber, tomato, feta, mint, parsley, bell peppers, mushrooms

I don’t even want to step out and turn on my grill most nights lately.

Lately we’ve made deconstructed salmon nicoise salad; cheese/charcuterie (my teens enjoyed but then asked what’s for dinner); shrimp scampi; kale, cherry tomato and feta salad topped with grilled steak.

Please share how you are staying cool and seasonal with your dinners.
