Another burned out here but amused thinking about OP's hungry toddler! At that age they were all about little kid tapas. Turkey meatballs - I made but you can buy. (they prefer to dip in ketchup). Fresh mozzarella cut into chunks and mixed with some italian dressing (or you can buy the prepared mozz balls). Bag of frozen mixed vegetables (beans were inevitably picked out) - today is his favorite vegetable and he's 14. I consider that a win.

I did mustard maple chicken thighs last week that my family enjoyed. Mix 1/2 cup Dijon/brown mustard with 1/2 cup maple syrup and 1 tbsp rice vinegar , garlic as you like it, and pour it over boneless chicken thighs. In the oven at 400 for 35-40 minutes, turning the chicken halfway through and broiling for 1-2 minutes at the end to get them browned. Reduce the juice leftover in a pan as a gravy and top with chopped rosemary .

Other than that I am as burned out as you on cooking and eating generally.

Buy boneless skinless chicken thighs (or use breasts if that's your jam) and make:

or Thai Grilled Chicken from Serious Eats:
https://www.seriouseats.com/thai-style-grilled-chicken-recipe. The lemongrass paste in a tube makes this a lot easier. Need fish sauce. The whole amount of white pepper is not going to make it very spicy so don't worry about that if your kids don't like spice.

Coconut rice: 2c dry jasmine rice, rinsed. Saucepan with 1/2c water, 1/2t salt, 1T oil of your choice, 14-oz can coconut milk, and a couple of curry leaves if you have them. Bring to boil, cover and reduce to simmer. Cook 15 mins or until liquid is absorbed. Let sit another 15 off heat.

Add a salad or veg or whatever.

I'm making a Thai green curry on Monday night, with chicken and vegetables, using a store-bought curry paste. It comes together in about 30 minutes, one pot for the curry and another for rice. I do have Thai basil growing in my garden, but regular basil will do in a pinch.

Another night will be grilled chicken thighs, with grilled vegetables (onion, bell pepper, zucchini, brussel sprouts, cauliflower). Bonus is that the leftover vegetables make a great lunch bowl with brown rice and chickpeas.
