Baked potato with lots of cheese, bacon and sour cream.

I can never get it to the perfectly fluffy inside and crispy skin when the kids are around. I eat while laying down on the couch watching TV. Always served with a ginger ale and a glass of wine.

And if seafood is agreeable you can go all out on coastal mexican (my favorite cuisine type) or Italian/greek.

Chinese/thai stir fry dishes with tofu instead of meat

I don’t cook in those instances. Well mostly not. I eat a lot of bag salad and veggie burgers.

Mushroom or beet green risotto
Seared sea scallops
Grilled vegetables with garlic with farro cooked in broth and a nice cheese like manchego grated in

Things like that which are not actually hard to make but kids don’t typically like. I also eat more big salads -/ like an enormous kale salad with a sriracha creamy ceasar dressing, mini tomatos, pumpkin seeds and a jammy egg on it.

I've gotten into a cooking rut because kids are picky, we're always busy. But the kids are going this week. I can even remember what I used to cook! Definitely more spicy things. More involved like making my own sauces.

But I'm lacking inspiration right now - what you you cook if cooking for 2 and not picky other than vegetarian preferred?
