They're so easy and a crowd pleaser.

Speaking of crowd pleasers - Rice Krispie treats are always, always a hit.

NP- thanks- I am going to try these, but with some fruit I cook down rather than jam.

These are similar, but no-bake and now that I'm thinking about them I need to make some.
They are the oatmeal chocolate peanut butter drop cookies that we used to call "poodles":

Chocolate chip cookies are everyone's favorite. I also like the jammy oat bar type bar cookies.
Check out the book "One Tin Bakes", it has a ton of sweet and savory ideas.

Agree that you can’t beat a cold lemon bar on a hot day. I use the Barefoot Contessa recipe. Make sure you chill them for a few hours before taking them to the pool.

My son loves snickerdoodles, and they have the advantage of having nothing to melt. Highly recommend those.
We also love lemon cookies: https://www.realsimple.com/food-recipes/browse-all-recipes/glazed-lemon-cookies,
And thumbprint cookies with raspberry or blackberry jam.

They are very addictive though - fair warning.

Oh and for bars I love America's Test Kitchen cheesecake bar recipe. Super easy and scratches my cheesecake cravings without having to make a whole cheesecake (and spend $40 on ingredients). Also easy to doctor up -- can make chocolate swirl or pumpkin versions.

My kids are swimming like crazy this summer, and so I'd like to take advantage of their hearty appetites and not being at school to bake a lot (and therefore hopefully spend less money on pre-made animal crackers, graham crackers, etc.).

What are your favorite cookies/bars that I should bake? No allergies or dietary restrictions.
