I wouldn’t make a “keto” cake, because that sounds terrible- plus would be make with a bunch of processed fake food junk. Not exactly heathy just because low carb.

How about a Swedish almond cake? It uses almond flour and stiff egg whites as the cake base with a creamy custard filling/frosting. While there is sugar in it (and I wouldn’t substitute), it is a low amount for a cake.

Almond flour shortbread cookies are very very good. King Arthur has a good recipe.

Low carb cheesecake is very very good. Food Network has a good recipe. Same is true for pumpkin pie.

A keto dessert seems completely joyless.

This would be my suggestion. Or maybe something like a pavlova, a Basque cheesecake, or a chocolate souffle sweetened with bananas. Has sugar, yes, but is a real dessert made from real ingredients. Processed stevia and sorbitol and those weird flour blends are NOT real food.

I’m not a keto expert but this pie recipe is very low carb and I think will be keto if you switch to keto chocolate chips instead of regular and either make it crustless or a keto crust. I’ve made it multiple times with success.

Congrats to your friend. I lost significant weight using keto about 10 years ago and have been down this road. To make a true keto cake (or any baked goods) using stevia, nut flours, etc that is edible (especially on the first go around) is nearly impossible. And be careful of a lot of the stores and brands - they’ll say keto or caveman but will still use sugar and rice flour.

They best I’ve been able to do I using a book callled “baked to perfection” by Katerina Ceremeja. The flour blend is heavily biased towards tapioca and you can substitute xylitol or stevia for the sugar.

Something Keto in NoVA is an amazing keto bakery. They made me the best birthday cake I've ever had, including all cakes not just the keto ones,

I'm making a birthday cake for someone who recently lost a noticeable amount of weight by following a keto diet. I'd like to make a cake that fits with their macros. If you've done a low-carb cake and been pleased with the result, could you point me toward a good recipe or even a box mix?

We taste-tested the King Arthur keto chocolate cake box mix, and it's really coconutty in a way that is more mashed macaroons than flakey cake. Flavor was good, and I think the texture weirdness is just gonna be part of doing a low-carb pastry.

Also, if you have good keto biscuit or scone recipes, or croissants (dream big, right?), there's a day-after brunch planned and I'd love to come through with some breakfast foods that don't disrupt their day.
