My kids enjoy these cheese enchiladas. I add black beans and green onions to the filling. You might need to make two pans to serve 10. I use her homemade enchilada sauce too.

The vegetarian thing is really throwing this. /there's not that many entrees that are veg (other than some great soups). Chile relleno? But that's not great for a) people on this coast; and b) a large group.
I've done large vats of refried beans and Mex red rice (never heard of 'green rice" per PP above) for people before with slow cooked meats. But maybe leave the meats out?
I recently made pizza beans and they were a huge hit for something like this. You could do a tex Mex version easily with pinto beans. I think there even is a smitten kitchen recipe that is like this baked pintos with all the fixings on top.
