I planted sunflower seeds, the seedlings came up and formed two leaves each, but now, a few days later, many of those two leaves have “disappeared”- possibly eaten by something, but I don’t know what if that’s the case. What’s going on and can I fix it?

Pay attention to the 'Days to Maturity' information. By and large, sunflowers take 60 days (according to the packet; none of mine are ever on this schedule, and usually take longer). There are some that are a little shorter or a little longer. Either way, you're looking at August for blooms.
