Or a big tray of roasted vegetables - I use red onion, zucchini, bell pepper, eggplant, carrots, sweet potatoes, brussel sprouts, and whatever else looks good. Chop everything into 1" pieces. Start the tougher veggies first, and when almost done add the bell pepper, zucchini, etc. Bring in a foil tray.

Dessert:
Strawberry shortcakes - slice a bunch of strawberries and macerate in a bit of sugar. Bring storebought shortcakes or make your own. Can of Redi-whip.

Brownies always disappear quickly.

Mains:
Teriyaki chicken skewers
Noodles with peanut sauce

This is delicious, is eaten cold, and holds up really well. I sub cashews for peanuts (I hate peanuts), and sometimes Thai basil for the mint.

I always either do brownies, I have a great recipe and use high end ingredients or some sort of hearty salad with beans and roasted veggies.

Really? It is good only when eaten immediately after putting together. But when sitting out, especially room temp or warmer, the feta turns into milky water and it looks like watermelon vomit.

I think it depends on the main dish...corn bread with burgers is not the best fit.

LOVE watermelon feta salad. Other salad-type items I regularly make for warm weather (both served cold):
- quinoa with feta, cherry tomatoes, cucumbers and olives. Lightly dressed with oil, vinegar and spices
- penne with fresh basil, arugula, cherry tomatoes (sautéed) and mozzarella pearls
- raspberries, blueberries and chopped strawberries dressed with honey and fresh mint

I have a friend with a picky son with autism. One of his primary food is chicken nuggets or popcorn chicken. Anytime she needs to bring a dish she brings popcorn chicken. It’s always devoured by all the kids. Never would have thought of it myself but it’s easy to do and always gets eaten.
I tend to do cut up fruit or some kind of dessert like brownies.

Last summer I often brought watermelon/feta/mint salad to potlucks and it went over well. Looking for ideas for this summer. Any suggestions? Something fairly easy, not too expensive and able to sit out for a bit at room temp are all pluses. Thanks for inspo DCUM.
