Is zucchini so nutritious that you need to go out of your way for it in particular. I thought it was mostly water.

My favorite way to make a side of zucchini in the summer is saute some onions in oil and then some zucchini to your desired done ness. Finish with salt, pepper, basil, and lemon zest. (Parmesan cheese if you are not vegan)

We like zucchini boats with some kind of ragu and a sprinkle of cheese under the broiler. I haven’t done it, but I bet my lentil bolognese would be good as the ragu, maybe with vegan cheese?

Cashew ricotta or Treeline sour cream. Not a ton…just enough to add body (we use gf pasta)

Grilled zucchini with chimichurri is pretty tasty. You can mix in other veggies too.

I make these all the time.
I use oil instead of butter and you can use whatever egg replacement you like. You can change up the spices if you prefer.

We've been slicing and lightly grilling it with red wine vinegar, olive oil and s/p. So basically italian dressing.

I have a ton of vegan zucchini recipes. My kids do like zoodles with an avocado or cashew Alfredo sauce, but I know you don’t want that. My favorite is zucchini scrambled eggs (I use just “eggs”) with trader joe vegan feta and mint. I also use grilled or sautéed zucchini on regular pasta. Also sauté with a bit of sesame of perilla oil and use in bibimbap or japchae or sushi. I have some Indian recipes that use zucchini too. Any recommendations? No one here likes zucchini as "spaghetti" (me included), but I'd love to incorporate more into our dinners as part of the main or as a side dish.
