Give the celiac kid dairy.

It’s ok to have one dish that not everyone can eat.

I do a lot of tacos and Mexican. Shrimp & steak tacos; taquitos with sides of guacamole, homemade refried beans and red rice; risotto; gluten free pasta dishes; try Marcella Hazen’s bolognese. Jovial is a food brand for gluten free pasta.

Explore baked tofu, mushroom, eggplant, sweet potatoes, black beans. Grill vegetables. Salmon.

Chicken tacos or other tacos are staples

Vietnamese ground chicken wraps with water chestnuts. Gluten free soy sauce, fish sauce, sugar, lime, Vietnamese ginger garlic sauce or Siracha. Serve on lettuce wraps or rice, add basil and mint.

Turkey chili

Gluten free pasta, rice noodles, japchae noodles

If your child is underweight I would add dairy to their food if he likes it.

Are you making things like Asian stir fry dishes, chicken or fish tacos (child with celiac can eat with rice instead of tortillas), chicken cacciatore with polenta?

Impossible meat tacos or nachos. Skip cheese/sour cream. Do refried black beans, chopped tomatoes, guacamole, etc.

Ooh. Stuffed peppers with ground turkey and rice are dairy and gluten free.
Sauté ground turkey in a pan with olive oil (non extra virgin). Salt, pepper, cumin, garlic powder and ground coriander to taste.
Cook 2/3 cup of jasmine rice.
Sautee 1 chopped yellow onion and at least 1 can of no salt whole tomatoes (chop the tomatoes). I use two cans as i like tomatoes. Season as well.
When everything is cooked mix in a very large bowl. I like 1-1-1 turkey, rice and tomato mix but you can make it more meat heavy.
Fill emptied red/orange peppers. Put into a large pan/Dutch oven and add 1/2" of boiling water on bottom and cover. Steam until peppers are softened.
I do this with everything already pre cooked separately. But you can use raw meat or slightly undercooked meat.
I make at least 9 at a time. They also freeze nicely when cooked.
Reheating, i slice in half, put on the side and broil/micro with some cheese on top.
One of the few dinners ill eat multiple times a week. Make on a Sunday and eat Sunday/tues and thurs with a chopped or lettuce salad.

When I was in a rut I did blue apron or something similar for a couple months. I still use some of the recipes! I think they have enough options now that you could find something to fit your needs.

I also bought a bunch of cook books from cuisines I wasn’t super comfortable with. Indian and Indonesian were fun to work through and might work for the dietary needs.

Ugh - one of my kids has celiac disease, one is allergic to dairy, husband does not eat pork for religious reasons, and I cannot eat red meat due to high cholesterol and digestive issues! We are a complete mess - and everyone is tired of baked chicken or fish, roasted potatoes and steamed veggies. My kid with celiac is underweight and pediatrician wants me to give him more protein and calories. He's a good eater but super thin.

Please give me some dinner ideas!
