Low carb meatballs can be delicious! Don't bread and saute them, only bake on a sheet so they don't need as much binder to hold them together. OR, sub crushed up chicarrones for the binder rather than panko/rice - this is my go to swap for meatballs, meatloaf, etc. if I need to serve a low carb guest.
Also, a friend is diabetic, and he has found corn gnocchi which he says are much better glycemically rather than regular gnocchi.
