I make bento type boxes of different cut up raw veggies (cauliflower, bell pepper, cucumbers, grape tomatoes, etc plus a few blueberries and walnuts) along with a couple of Good Foods avocado or guacamole single serve packets. Easy to nibble on and totally fills me up until dinner. Also easy to grab and go as I make several at a time and keep in the fridge.

Stir fry with lots of vegetables, tofu and homemade sauce. I use the frozen stir fry veg mix from Costco. Takes all of 15 minutes. Serve over jasmine rice.

Where do you buy the bright farms lettuce?

Everything I eat is healthy. Roasted potatoes, beef roast, salads, chicken, cabbage etc. I cook it all myself.

I eat basically 3 things for lunch:

1. Big salad - for protein I add some combo of black beans, avocado, goat cheese, TJs falafel, hard boiled egg, edamame, nuts or seeds.

2. Soup - I usually make my own. There's a recipe for Greek lentil and spinach soup that I got in the WaPo a few years ago that I love. One batch lasts the week. For canned soup I like Pacific Food thai sweet potato.

3. Grain bowl with poached egg. I make extra farro for dinner and then hold some back for lunch. I throw some broccoli in the air fryer, add some avocado, and a poached egg on top. Obviously only works if you WFH.

Salad - buy good greens, tuna, kalamata olives, snack peppers and/or cucumbers, cherry tomatoes. This is better in the summer, but all of these things also taste ok year round.

I don't usually eat a big lunch. I do eat two eggs and Daves 70 calorie toast for breakfast, so that fills me up pretty well. And we eat an early dinner.

Of course there are also lots of days that I indulge in a grilled cheese, chips, and an apple.

I wfh. Most days my lunches are either egg salad (made by mashing 2 hard boiled eggs with a little dijon mustard and 1/4 avocado) on dave’s seeded breaded with microgreens, or a big salad with greens, cucumber, diced red pepper, shaved parm, pepitas, avo, and either deli turkey (torn into small pieces) or diced hard boiled egg on top, in whatever dressing strikes my mood (lately Gotham Greens lemon basil).

Toasted Ezekiel bread with peanut butter and sliced apple on top, with whatever leftover roasted cruciferous veggies we have on hand from the night before.

a huge amount of Bright Farms Sunny Crunch lettuce (I know it is weird to be specific about lettuce, but this stuff is amazing)
6oz of chopped chicken (I make a batch for the week, or buy ready from the store)
1oz pepitas
2tbs Olive Garden Italian dressing plus an extra splash of some type of vinegar

Sometimes I'll add:
feta
cucumbers
red onion
diced apple


Easy, protein and fiber heavy, and very filling. I eat it out of an enormous bowl

I like leftover meat (chicken, steak, or pork) in a bowl with a bit of cheese and some broccoli. Filling and I’m getting my protein.

I am looking for ideas. Any help appreciated.
