If it’s a nice night & you can grill - chicken soulvski /chicken shwarma with fresh veggies, hummus, dips, rice, pita,

Feta & chick peas for non-meat eater?
Or pick up some falafel

Option 1: Chicken and Veggie Skewers, Halloumi and Veggie for the Vegetarian, pita, hummus, baba ganoush, saffron rice and salad

Option 2: Two trays of enchiladas. One is a black bean and butternut squash with red sauce and one is chicken with verde sauce, chips, guacamole, salsa, corn avocado bean salad

Option 3: Pasta Fagioli, homemade focaccia, salad. Have a large charcuterie board out before.

I love taco bars but only if you make the guac and a meat that isn’t ground beef, and also make restaurant refried beans. I like to do one with Fish tacos, sriracha lime crema, cilantro/parsley and an Asian slaw. I put out homemade guacamole, salsa, tomatoes, beans and cotijo and cheddar cheeses. Homemade margaritas add to it as well and are so easy to make squeezing fresh lime.

Just went to a school friend’s house and she had this exactly. I was delicious. Most people ate the veggie one, even though on 2 of us are vegetarian

This. Get those disposable tins from Costco. One filled with rice, one filled with black beans (one bag of dried beans makes a lot cooked), one filled with 2-3 lbs ground beef if it fits your budget. Chopped romaine and tomatoes. Hard and soft taco shells. Cheese, sour cream, premade guacamole, salsa, hot sauce. Everyone makes their own taco or salad. Beef is expensive but rice and beans are cheap. Get some premade margarita mix and tequila, lemonade and fizzy water.

We will be hosting 12 college women and 4 adults on Thursday. One vegetarian. What would you serve?!? I would like to cook to keep costs down. I’m a good cook. I’m defaulting to pasta, but looking for other ideas, please.
