I do something similar but use puff pastry instead of pie crust. Just bake separately and split horizontally pour filling over bottom and top with other half.

You can also make chicken tetrazzini kinda like tuna casserole but with chicken.

I like to add a jarred Thai curry sauce along with some frozen vegetables. Simmer 10-15 mins and serve over rice or noodles.

I use my leftover rotisserie chicken to make chicken salad with red onion, walnuts, dried cranberries and vadouvan curry in the mayonnaise - yummy!

Stir fry: Stir fry with sliced veggies (peppers, onion) broccoli, any other veg you like. soy sauce, Sriracha, sesame oil. Sesame seeds, peanuts if you want.
