Many whole chickens don’t get sold as people boneless skinless cutlets or drumsticks .
The whole chicken is actually more value for price because you can keep the carcass and bones to make chicken stock, soups, etc,. All the good vitamins and collagen and stuff is in the bones and skins and giblets at least for soups and stews . boneless/ skinless is easier to cook however
But.. you can buy bone in, skin on thighs. So not sure that logic makes sense. I’m far more likely to debone a thigh than break down or roast a whole chicken. I just want them to debone it for me and leave the skin.
