Dump one pound of chicken, one can of salsa, and one can of black beans in a slower cooker and cook on low for four hours. Shred chicken when done. Super easy.

I buy black cod. I put a litltle EVOO on it, then paprika and salt and in the oven for 10-11 minutes at 375. Couscous on the side and raw veg. Meatsauce and pasta is easy to make too. Baked chicken with roasted potatoes and veg.

Eggs are your quick dinner friend. Fritatas are easy and fast - saute some veggies and a meat (sausage or ham) and pour beaten eggs over them. Start on stove and finish in a hot oven. Takes 10 minutes. I also love some sort of a shakshuka type of thing - put tomato sauce in a pan, crack a bunch of eggs into the sauce. Cover and simmer until eggs are as done as you like them. Serve with crusty bread.

I consider avocado toast with a fried egg on top to be an acceptable meal as well.

Make extra protein one night and turn it into enchiladas the next night - the sauce and cooked tortillas mimic the gooeyness of cheese and it takes no time to throw in oven

make rice ahead of time and chill for quick friend rice - or just buy frozen rice

-corn or flour tortilla with a slice of cheese, add leftover meat from the night before (or buy shredded chicken to put on as needed) and put in toaster oven. If I'm going to make 4, then I put on a baking sheet and put in oven at 400. Serve with can of Goya beans and salad out of a bag and dressing. If he doesn't like beans, then serve with corn. Steam in a bag is good.

-put chicken in a pot, add chicken bone broth plus a can of chicken and rice soup with the water. Add brown rice. Cook until chicken is done and rice is cooked. Add bag of mixed vegetables. Separate chicken after it's cooked to get a sort or soupy stew. Super easy.

You need a crockpot and once a month meal prep Sunday where you cook and freeze crockpot meals so it’s just thaw night before, dump, and go. Or make and freeze things like meatloaf , chicken pot pie, soup, etc. Also make extra of everything so you always have 2-3 days of dinner. If you can make a huge pot of soup on Sunday you can stretch it until Wednesday by adding salad and bread. Then Thursday make an extra big crockpot of bbq or something and serve it various ways. Get sides like macaroni salad or potato salad and steam some veg or add a salad. Pre bagged salads or Sunday salad prep. Lots of fresh whole fruit is easy too.

Dairy-free breadcrumbs (for chicken tenders, meatballs) and Asian recipes (e.g., beef and rice bowls, fried rice) will be good for your needs. Skillet and sheet pan meals too if you can do some prep like the chopping the night before or earlier in the week.

Easy tacos - frozen fish sticks, rice, lettuce, pico de gallo, corn, refried beans from a can

Yes he eats all meats- pork, chicken, cod, beef, etc. We do not do vegetarian meals for dinner.

I do all the normal meals: roast chicken, chicken thighs, pork tenderloin, air fry cod, meatloaf, spaghetti, etc. during normal times. Just looking for meals that require no marinade, little prep time, and are quick <20 minutes. I am essentially solo at home between the hours of 530am-6/7pm while working full-time, doing all housework, pick up and drop off, after school and activities.

Tomato pie. Like pizza, but you don't add any cheese. Get those premade crusts and add the tomato sauce and bake it. Serve it with some kind of vegetable like corn.

I am pregnant and my husband is working 10-12 hour days and some weekends, which is unusual for his position but will last for at least another 3-4 months, and we are treading water as a family. Spending way too much on takeout. I have plenty of meals in rotation for breakfast and lunch is a set rotation of items, but dinner makes me crazy because by that point I am done.

Please post your fast, easy, minimal prep dinner ideas or maybe suggestions on systems you've used in similar circumstances. If you have favorite websites that'd be great too!

My son cannot tolerate dairy so no milk, cheese, butter, cream cheese, yogurt, etc. recipes. Vegan substitutions are expensive, expire quickly, and dont taste that great so we avoid them which means normal kid-friendly easy meals like pizza, mac n cheese, grilled cheese, etc. are no-gos.
