Will the current valve work with the new fixtures ? If not, hire a plumber or a handyman with experience changing valves, fixtures, and blue board & tile.
We just switched from an alcove bathtub to a free standing bathtub. Hired an experienced handyman to do the plumbing & tile work after the old tub had been removed. The two supposedly very experienced handymen gave up after 4 hours, but they did install a new P-trap. Ended up hiring a separate tile person (about 4 or 5 hours of work) and two licensed plumbers (combined 20 man hours of work).
If it really is just fixtures (knobs & faucet), then it should be fairly simple; however, most folks prefer to switch out the valve & old plumbing while checking for hidden leaks.
