I’d be worried about doing something stupid that would make the boss rethink the offer before I had a chance to show my work product!

I'm surprised at the reaction here. I'm as anti-social as they come and would hate this, but even I think the request is not that crazy. DCUM is usually all about connecting in person and striving and trying to get a leg up with the boss any way you can.

OP's manager doesn't want to socialize with them.

People seem very uptight. I think you could reach out shortly before you start and ask if there is anything you should connect on before your start date. Say you are happy to talk on phone or could meet for a quick coffee in person. I think you will just seem excited about the job and ready to hit the ground running.

When I changed jobs, my new manager reached out to me about getting lunch before I started bc we live in the same town (though it's a mostly remote job). We talked about work + non-work stuff and it was nice.

It's not unprofessional to grab coffee. In fact, it's a common way to do informational interviews and to network more generally. It certainly wouldn't be weird to ask your soon to be boss if they have time for a coffee.

I'm cringing just reading this.

It could go either way. I would maybe wait until you start and then lightly say we live so close, we should meet up sometime! They might perceive it as showing favoritism to you so I would leave it to them to invite you and just kind of hint you're open to it.

Seems fine to me.

I accepted a job offer yesterday and don't start for 2 months. It's a remote role with the other team members being dispersed throughout the country, but my future boss and I just coincidentally live in the same city. Would it be weird to send her an email and say I'm excited to join the team and would love to meet for coffee prior to my start date? All of my interviews were virtual so we haven't met in person.
