How about the zippered sheets.

These or just a metal frame with a fabric headboard.

Or this Flekke also works well for smaller spaces. The upholstered corner style fits nicely into each corner of a small room, then you ca fit a small side table between the two beds.

And the upholstered corner is comfortable for kids to sit up against and read.

Anything up against the wall is also going to be difficult to change sheets.

This could work if you can get beds with drawers under them so you don't need dressers.

Something like this: https://www.wayfair.com/Viv-Rae™--Harold-Twin-Platform-Bed-X114665259-L1074-K~W003554148.html?refid=GX685159893086-W003554148_1526342817&device=m&ptid=451349029183&network=g&targetid=pla-451349029183&channel=GooglePLA&ireid=68927929&fdid=1817&PiID%5B%5D=1526342817&gad_source=1&gbraid=0AAAAAD9ISC5VPQ8AYH3cyCx2RWko27j9v&gclid=EAIaIQobChMIwN32kquihAMV90pHAR2ykwskEAQYAiABEgKR_PD_BwE&piid=1526342816

Or one twin bed with a trundle pull out bed underneath. You only pull the trundle out at night so they have more space to play/move around in their room during the day.

To everyone suggesting the kids learn to change their own sheets: I agree that they should learn but there will still likely be some times that OP winds up being the one to do it let’s be realistic. Kid wakes up in the middle of the night vomiting in bed. You’re making the kid clean/change their own sheets? Then what about other scenarios where it may be hard for OP to reach up or climb up onto the top bunk? (Kid is sick/injured and needs parent to help him in/out of bed. Kid is scared/has bad dream and wants parent to lie w him. Etc)

Oldest has special needs and newly age 9. I’m thinking too of times when they may be ill in the bed and trying to clean a bunk seems rather difficult with vomiting etc…

Due to my multiple sclerosis, changing sheets on a bunk is not possible.

What layout and beds would you use? Two boys fwiw.

I am reading maybe L shape is best?
