I make a deconstructed version, which my family loves more than conventional stuffed peppers:
Brown onions until soft, brown add minced meat
Add Rao's tomato sauce, just as much to have a fairly thick consistency.
In the meantime, half the peppers, I use red or maybe yellow or orange.
Microwave so they're a bit soft
Fill the half peppers with your meat/tomato sauce mix
Put some tomato sauce in bottom of oven safe dish.
Add the filled pepper halves
You can pour a bit more tomato sauce on your peppers - or not
Top with cheese, mix of gouda and pepper jack (or any other cheese that melts easily)

Pop in oven and bake until cheese is melted, broil to have a nice baked crust

Thank you! I'm going to look for them and give it a try.
I also change it up by subbing out the rice for quinoa or farro.

Forgot, add a few splashes of Worcestershire sauce to the meat mixture.

Brown/cook ground beef or turkey , drain
Dice onion and garlic , sauté
Cook rice - white or brown
Make or get a jar f marina sauce
Blanch (boil for a few minutes) green peppers -remove seeds and tops.
Shred cheese

Mx together meat, nions, garlic, rice and add marinara sauce. Enough sauce tha everything is coated but not soupy. Season with salt and pepper

Place peppers in an oven safe pan or dish, stuff with meat and rice mixture, top with cheese. Cook until cheese is melted.

Bump! I just buy the prepared ones from Costco—they’re so good and it’s something everyone in the family likes. Would love to have a recipe to make them at home though.
