Subject: In desperate need of ideas for a very part time job.
Could you work for a family as a household manager? Grocery shop, errands, meal prep, laundry and light housekeeping? 2-3 days/week for 4 hours a day...?
Otherwise, I've heard Container Store has good retail benefits. Starbucks, Target (mentioned), hospital admin, medical transcriptionist, receptionist at a doctor's office (I did this right out of college and more than half the admin staff was part-time).
Keep in mind that if you are part time, chances are you will have limited flexibility. Work it out with DH in advance that he takes time off for sick kids.

I would look at service industries for front desk work like gyms, beauty salons, community centers, places where they need someone greeting and sitting for certain hours.

Substitute teaching. You pick the days when you are available week to week, day to day. Many half days are even available.

Admin at a staffing agency. They often need interviews scheduled, candidate profiles put together, calendar management, social media management, emailing background checks, verifying references, etc.

OP- My husband is very attentive with our kids and would be very happy to be home with them solo on the weekends while I worked. He however often has to go the his office on the weekend and it is not very predictable which weekends he does and does not need to. I don't want to be in a situation where I have to call out on a job every other weekend.
I am open to considering doing childcare work but in all honesty would prefer to spend that time interacting with other adults.

Weekends should be perfect unless he doesn't want to watch be with his own kid.
Two weekend brunches or two to free dinners would bring in $2k easily.
I worked years around my husbands schedule and saved us daycare/nanny money.
