I make a variant of this. No potatoes though or butter. Instead I add an onion and curry powder. A boat load of curry powder!

This is super simple, but I like turnip soup. I sauté an onion, add cut up turnips, cover in chix stock (or even just water) to cover, boil then reduce to simmer. Cook until turnips are tender. Use immersion blender. Salt and pepper to taste. My bff laughs at me and calls me "Laura Ingalls" when I make this, but I love it. It's creamy without cream.

Cream of asparagus. Sautee an onion in butter, add 2 bunches of asparagus (chopped with bottom part of stalk removed), 4-6 cups of broth, cook for 15 minutes then blend and add some whipping cream and salt to taste.

I love a butternut squash soup flavored with red curry paste and coconut milk. Garnish with cilantro, squeeze of lime, fried shallots.

Cream of Spinach soup (no cream)
Chop and sauté in 2 Tbl butter:
1 stalk celery
1 carrot
1 med onion
1 yellow bell pepper
1 clove garlic (optional)

Add 5 cups of filtered water, bring to a boil. Add 2 lbs fresh spinach and cook 2 minutes. Taste for salt and pepper. Puree and serve.

Do you have a creamy or pureed vegetable soup recipe that you like? I'm in the mood for a healthy soup, my immersion blender is on standby. I poked around on Google but nothing on there seemed terribly appealing - turnips? No thank you.
