You can make it without butter and it's perfectly fine to eat carbs.

which uses chicken broth, tumeric, and cumin for the rice.

Some use saffron and some use turmeric. It depends on the region/recipe. Do you mean the kind that is all yellow, or like at MobyDick where there is a mix of white and yellow?
