Not trying to stress you out but I think that’s cutting it a bit close without sides other than fruit. (Assuming they’re standard size I would allocate at least 2.5 pancakes per person and a bit to spare, assuming most people would want 2-3)

Sorry about the job, OP. We did a party like this too for the little ones and had them come in their PJs too! Keep it simple - fewer messy toppings and no nuts with that age. Make the pancakes in advance and warm them on a tray. its ok to use frozen ones too - you have a lot of people. I wouldn't expect the adults to eat much but I would serve coffee!

I'm thinking I will skip a cake too and just let DD make her pancakes first and stick a candle in them.

Holy cow, op, do this! The largest group I’ve done pancakes for is 15 people, and I found that overwhelming. I can’t imagine doing it for 60! The sheet pan option sounds great!

Skip the nuts, berries and curd. I'd also leave out the sprinkles because so messy. Choc chips, sliced bananas, whip cream, syrup are enough. A meat would be nice to have but not necessary. Sausage is probably cheaper than bacon if you can find some on sale.

I don't think you need to add more sides to what you already have.

One thing I might consider is that if you send a reminder to folks, just be clear about what you're serving.

I think what you have is fine.

My daughter requested a "pancake party" for her 3rd birthday and we are doing it on Sunday from 9:30-11:30am. Every single person we invited said yes which I was not expecting at all so we have like 60 people coming to our house. I very unexpectedly lost my job on Friday so now I am in a tailspin and stressing about money. I'm going to serve pancakes (premaking them the night before) with a bunch of toppings- berries, nuts, chocolate chips, lemon curd, whipped cream, etc and a big fruit salad. Then I'm doing OJ and apple juice, coffee, tea, and mimosas. Do I need to serve additional sides like bacon and sausage too or do you think I can get by with what I have currently?
