I'd do a vinaigrette with rice wine vinegar, olive oil, a little sugar, a little soy sauce, a dash of salt (I do use salt and soy), a squeeze of orange juice, and white pepper. I would add celery to the salad, maybe?

Serve with scallion pancakes instead of bread. With sweet chili sauce and chili crisp.

Hi, DCUM foodies --

What kind of dressing would be most flavorful with a spinach salad with orange slices, scallions, cucumbers and maybe almonds or peanuts? I'm serving this with chicken thighs marinated in soy sauce, rice wine, garlic and ginger.
