I made a new-to-me cookie that uses corn starch instead of wheat flour (
https://milkandpop.com/cornstarch-cookies/) and it got me thinking about how corn starch might affect my gut health/microbiobe. I tried to google whether or not it counts as a resistant starch, but couldn't find anything.
Obviously, a cookie is a cookie, not a health food.

I'm just wondering what the gut impact and glycemic impact of a larger portion of cornstarch might be; I only usually use a bit to thicken sauces and such.
