This sounds good, how do I make them?
I don't use a recipe but I toss carrots with olive oil (can use regular or garlic olive oil), salt, pepper, garlic cloves, lots of lemon juice and zest, and some maple syrup (if your carrots are really good and sweet less, so try one first).
I like to cut the carrots in rough odd shaped pieces about the size of my thumb. But you can cut them however you like.
Roast at 425 for about half an hour, tossing half way.
Sprinkle for fresh parsley if you want but not necessary. Good on salad too, warm or the next day. Also easy to add peppers or halved grape tomatoes to this.
