I’ve recently made these things w good results:

Chickpeas and cauliflower, roasted w garam masala and other spices
Lime cilantro rice
Tomato soup
Chicken thighs and rice in the rice cooker

Roasted vegetables also a classic

If you want to use your rice, I make my so called Mexican Rice frequently for sides, or bean and rice burritos. I just put rice and water in a rice cooker with Salsa and taco seasoning.

I made this soup this weekend and added beans and substituted Impossible Meatballs for the sausage. Delicious. Served with roasted baby potatoes.

Last week I cooked some farro and roasted butternut squash cubes.
For lunches I had a salad of arugula, farro, butternut squash, goat cheese with lemon juice and olive oil. It was delicious!

Beans - obviously depends on the beans. I love just dumping a can of black beans (most of the liquid drained out) into a pot and add a ton of cumin and lime, then eat that with chips, sour cream, avocado, etc., and eat with tortilla chips.

If you have refried beans, you can do a seven-layer dip thing.

For potatoes, you can do baked potatoes, a spanish tortilla, potato salad served with a roast chicken or something.

I don’t like buying specialty ingredients, so you could skip the saffron and rosemary and it will still taste good. just throw in some dried thyme. I do have smoked paprika in my pantry already. I hate prepping leeks so would get them pre-prepped from TJ’s. Pro tip - the pre-prepped bagged leeks from TJs actually last quite a while! If I truly did not want to bother I might just do onion and more garlic.

I keep dutifully buying all staples. I have it all: Beans, lentils, rice, farro, quinoa, potatoes, onions...

What should I actually make? Plant focused but can have meat too. I'm going to the store later so sky's the limit. Just need inspiration!
