I was at the farmers market this morning and bought the ingredients for a pear-stuffed acorn squash recipe from a cookbook I got for Christmas. Thinking of doing those with maybe a flank steak or brisket, that’s actually what I was looking for recipes for on here when I came upon this post.

We are out in Northwest VA, so expecting about 3-6 inches of snow. I’m making navy bean soup for lunch tomorrow, and chicken Parmesan for dinner.

Morning waffles for sure! Haven't figured out dinners yet. Homemade pizza and Georgian dumplings would both be good and I think we have the stuff, but a stew sounds even better, just don't have meat.

I made vegetable soup yesterday, with all the leftover veggies in my fridge: carrots, turnip, potatoes, leek, onion. I added a little bit of lentils and rice and flavored with curry.

We're trying to eat less red meat and more veggies this year.

If I were staying home, I would make a white bean and rosemary soup.

But alas, I will be at children’s birthday parties, soccer games and basketball games. Enjoy your day at home!

I made this soup in the slow cooker yesterday. I made some modifications:

-substituted hungarian hot peppers for the potatoes
-added regular and smoked paprika and thyme
-used kale instead of spinach.
-I use dried chickpeas (cooked ahead of time in the Instant Pot)
-Tip: Butcher's Alley in Bethesda has really good chorizo - both Spanish and Portuguese

It was delicious!
