The air fryer is great for vegetables. Broccoli, brussel sprouts, sweet potatoes, cauliflower, asparagus - so many options. Chop into bite sized pieces, toss with just enough olive oil to give them a thin coating, sprinkle with salt and pepper. Air fry - you can find recipes online for specifics, but I find 380 works well for most. 5-7 minutes for tender veggies like asparagus, 8-10 minutes for heartier veggies.
They can be a great side for chicken or salmon, or more of a main in a grain bowl. I also like root vegetables topped with a poached egg.
