Sautee carrots onion and celery until soft. Add garlic, cumin, coriander, ginger, turmeric and cinnamon. Add the lentils and toast in the mixture then add water or broth and a bay leaf bring to a boil and simmer until lentils are cooked. I usually will use the immersion blender and blend about 2/3 because I like the texture.

Some article I read about diet and longevity described this family of 90+ year old siblings who have eaten the exact same bean soup every day since they were children.

I've been posting this since my kids were little. Even as toddlers and preschoolers, they loved this. Speaking of which, I haven't made it for a while, so it may be time to make it again!

If you want carrots, you can get matchstick carrots and add to the first part of the recipe when you are sauteing the veggies to soften.

I've never actually made this recipe, but I often think of this article about a guy who eats the same lentil soup daily for 17 years... must be good?

Buy frozen or pre made mirepoix, put them on to sauté with some olive oil til translucent. Add salt, pepper and some diced garlic. Spices too- cumin and garam masala. Sauté briefly, add one cup washed lentils (I like Puy or black) then cover with water by a couple of inches, bring to a simmer and cook until done. Add a squeeze of lemon juice, spoonful of bouillon paste or powdered bouillon, season and top with a glug of good olive oil, chili pepper flakes and parmigiano reggiano. Super!!

Red lentils? Fry onion, shredded carrot, add hot water, bring to boil, add washed red lentils, and cubed potatoes. Cook for about 20-30 minutes. Add some salt, pepper, spices (cumin is usually good), a small squeeze of lemon juice to balance acidity.

You could also add to the vegetable mix diced bell pepper and / or celery.

To make it more hearty, you could replace olive oil with bacon, and fry the veggies in bacon, and add ham or sliced sausage.
