I have been using the Land o Lakes sugar cookie recipe for 21 years and it works great and tastes even better. I use the recipe linked below with a few changes. I add 1/4 to 1/2 cup extra flour to the mix. After you mix it up divide it in half and put each half on sheet of parchment paper. Place another sheet of parchment on top and then use a flat bottom plate to press the dough until it is a flat disk about 3/4" thick. Fold the parchment paper around the edges and then place the disks in the refrigerator for at least 24 hours. When you take them out let them sit on the counter for about 10 min and then roll out.
I use a royal icing recipe that uses lemon juice for thinning it out. The citrus in the cookies is in the background but definitely cuts the sweetness overload that can happen with cut out cookies that you then ice.
