Does it have to be English peas? Does it need to be elegant, or just tasty?

If you can use any kind of peas and are looking for something that tastes good, I’d suggest making Hoppin’ John (which is based on black-eyed peas).

Alternatively, maybe do something like fried rice with sugarsnap peas. For that matter, simply sauteeing sugar snap peas in olive oil and salting generously, I think beats any kind of English peas (but only if you serve immediately. I don’t think it would be good for a potluck).

It if can have peas with other things, then this is one of my favorite recipes. I've made it for parties and it's very popular as both a main (for the vegetarians) and a side (for the omnivores).
