Not PP, but also a NYer. Salt potatoes are Syracuse.
You also have garbage plate, then Utica greens, half moons, and riggies (though these 3 are central NY, not statewide.

On it. We put tater tots on it, not in it. And there’s not one hot dish, there are hundreds and you’ve eaten them. They’re called “casseroles” everywhere else.
