We bake our mac and cheese at 425, so it probably won't get ruined unless it's very dry. Put foil on so it doesn't dry out and check it between 20-30 min.

That’s sounds good, in theory, but I’ve found baked dished in ceramic/stoneware dishes that have been in the refrigerator take forever to warm up to hot in oven. Nearly as long as baking them in the first place.

This is what I would do, actually 425 sounds high for stuffing anyhow. There two items in oven at 400 would be fine. Even 375 would be fine, possibly leaving stuffing in longer and broiling the last few minutes if you want a crunchy top

Yes. Split the difference - 400. Mac n cheese will be done a little earlier than the recipe says, stuffing will take a little longer. Check every 5-10 minutes before/ after the recipe calls for.
