I can't remember what we did in previous years. I usually do the dry brine method of salting it frozen and leaving it in the fridge, with it uncovered the last day to dry the skin. Does it really take 5 days to thaw???
They want to brine for 48h. If you leave it in a fridge a 12-14 lbs Turkey will definitely take about 3 days, so you gotta do it now. I mean you could always thaw in a water bath too if you wanted it to be a lot faster.
