Other ideas:
- I have seen people turn old books into art. Years ago in one of the Obama White House years, I visited to see the holiday decorations and they had several Christmas "trees" made out of books turned with their spines toward the trunk and the pages fanned and and cut to look like the needle of tree branches. Maybe you could look online for an artist who makes this kind of art installations and send it to them.
- Similarly, if it is hard cover you might bind a book binding facility who can recycle it. A friend of mine does custom book bindings and she has reused the bindings from unwanted books to create some of hers if they are in good condition and suit the project. But I think this would only apply to good quality hard covers (I can't remember if it had to be a sewn binding or if she ever used glued bindings). But something to look into. The components of a book are mostly re-usable (and the pages can be recycled as pulp.
