I think the important things are knowing how much sodium is in basic foods — including things like raw poultry, so you can limit it accordingly; Making the sodium you do use count for flavor; and finding low sodium seasonings. I personally like caramelized onions, whole cumin seeds, toasted sesame oil, salt free peanut butter, and cilantro for adding a lot of flavor without added sodium. It also helps to have low/ no salt seasoning mixes on hand. Penzeys has some great options.
