Its excellent made with fresh scallops. I would not buy that at the grocery store. Go to a real fish market.

I found pre-sliced yellowfin and halibut vacuum sealed in a box at Whole Foods. Made for sushi. Delish.

I don't live in DC area but at my local independent grocery store (would be a competitor with Wegmans I think) I ask they guy at the counter what's good enough for sushi (can't make myself say fishmonger with a straight face). Normally I do "sushi grade tuna"

I finally got the willingness to prepare ceviche at home, with ingredients I know are fresh.
What are the best places (outside the ocean) to get the freshest fish? What’s the best fish for ceviche?
