Lots of kosher salt is the answer. Plus buy quality chicken. Pound thin so you only have to cook a few minutes on each side. A little dried onion, garlic, and paprika. Grill, broil or pan fry about 3 minutes on each side.

I'll wrap a chicken breast in 2 slices of prosciutto, start it on the stove in a skillet, turn over and stick in a 400° for 18-20 minutes. Super tasty and keeps it from drying out.

Try marinating for a few hours in Italian dressing. Remove from marinade and bake as usual.

We do marinate sometimes. This is for the times we don't.

I think soaking in a brine May add flavor

I prefer thighs. Fat = flavor

BbQ sauce - there are lots of variety. Avoid the Carolina types which tend to be vinegar-based and therefore tangy and spicy, for example.
