I freeze tomato paste and sauce all the time with no issues. On this time frame though, I would make the sauce Thursday or Friday and just refrigerate it in a sealed container til Sunday.

I wouldn’t. The purée part will separate from the liquid when thawed. I usually think about what kinds of stuff I see in the frozen section to determine what I can freeze. I’ve never seen anything related to tomatoes. If you can wait a day or two to purée, it should be fine in the fridge till Sunday.

I have tomatoes that I need to use, and I have a recipe that calls for tomato purée that I plan to make Sunday. Can I purée the tomatoes now and freeze it, or will it thaw out funny?
