Usually just salad.

I don't use a recipe for enchiladas, just usually make it as a 2nd meal after we have roast chicken. Just shredded chicken, shredded cheese, a bit of the jarred sauce + any vegetables I happen to have around (onion, pepper, etc.). Mix together. Soften corn tortillas in the microwave, fill/roll up with the chicken mixture and put those in a casserole dish. Depending on how much chicken I have I'll use a smaller or larger pan. Pour jarred sauce over it and a bunch of cheese. Stick in oven a 375 until it's all bubbly.

This is fantastic. If making the sauce yourself feels like too much work, you can buy enchilada sauce. But I think making it is worth it because it is so good.

Oh, and the emphasis is on healthy/low cal here, but you wouldn't know it based on taste.

I decided to learn to make enchiladas in grad school bc the area had no TexMex. I was intimidated by all the steps and frying at first, but it was easier than expected. The frying is key and not as hard as you expect.

I learned from this Texas Monthly recipe:

My mom made something like this, but sour cream instead of cream of chicken/mushroom. Soooooo good!

I shudder to think of my life before having enchiladas verdes. We use Herdez.

+1 Green sauce is the way to go.

We start with rotisserie chicken OP. Bag of 3 type shredded cheese.

More info. This sounds fantastic.

I love skinnytaste's recipe, I use the Frontera enchilada sauce packet. I cook the chicken in the crockpot, so it does require a little planning ahead.
