Absolutely not. That's a violation of trust. No one should be snooping into anyone's phone behind their back. My DH would never do this, nor would I.
what makes you think it was behind his back? Sometimes people ask someone to do something on their phone, like I might ask my husband or kid to send a text for me if I’m driving.

+1. It could be a worrying reason for saved. It could be as simple as having proof that in the daily struggle of middle age life, someone finds you attractive.

I think you should tell your husband that his behavior makes you uncomfortable, specifically, not telling this woman he was married. It's perfectly fine to have friends of the opposite sex, and do activities with them without your spouse in tow, but everyone needs to be on the same page.

I noticed my husband saved a chat (Archived) on WhatsApp from a woman who comes to the gym asking him out for a couples game. We are married with 2 kids. He just said he had plans that weekend but failed to mention he was married etc... I am not sure why he saved the chat - my thoughts running like does he want to ask her out in future etc.... should I ask him about it or ignore. I did not notice anything different in his behavior towards me.
