I melt good quality dark chocolate in hot coffee, with milk. It's not a (habitually disgusting) mocha, where coffee shops put cheap cocoa powder in a latte. What makes the difference is the quality of the chocolate.

Coffee is really good with molasses instead of sugar. It gives it a gingerbread kind of feel, which you could probably accentuate with some ginger and cinnamon.

I add salt to my (plain) coffee grounds before brewing, too. It takes away the bitterness and makes it smoother.

When you're making a pot of flavored/spiced coffee, a key ingredient, after putting the ground coffee and spices (cinnamon, nutmeg, etc.) in the basket is to add salt on top. The spice flavor will be much more evident in the coffee.

After cinnamon, nutmeg, and pumpkin pie spice, I like cardamom in coffee.

I recently started adding nutmeg to my coffee at a coworker’s recommendation. Delicious! I’ve also tried cinnamon and pumpkin pie spice. Has anyone here ever tried adding anything else to coffee, and if so, please share!
