DH bought out a rooftop pool are in Europe for a private meal. Based on what he paid they probably would have arranged for us to eat off a lions stomach if he had asked. So I am sure serving you in the pool wouldn't be a big deal.

What kind of pools are you going to? Most use chlorine.
The nicer resorts have saltwater pools.

If there is one thing I have always thought when sitting in a comfortable chair, eating a nice meal at a table it's "this sitting down thing sucks, there has to be a better way to do this"

The real question is: why would you? It's like breakfast in bed. Risks of mishaps abound. I prefer to eat at a table like a normal person - the quality of the food is more important than a weird place to eat it.
