Check your school's website for the process to request a schedule change. The counseling page will have a list of counselors and which part of the alphabet they cover. They may have a google form to submit, rather than an email. (Email is overwhelming at this time of year. A Google Form allows the entire counseling office to see the volume of change requests and handle them in batches.)

Yes. In Synergy mail, click Compose, then click the To field, then click [kid's name's counselor]. It will fill in their name and email address.
