Find fellow volunteers and delegate the "unsanctioned" (not even sure what that means though) tasks.
As a veteran volunteer, embrace the change and spearheaded projects (or whatever you do) to turn it around. If you get push back, say your pet Project XYZ is more aligned with the values and mission as a whole of ABC Charity (or whatever fluff words you want to use) than their current model.

Can you provide any more info about how this ties into DH’s career?
Frankly, the best way to back out without repercussions would be a white lie: taking a break to focus on xyz (home renovations, assisting elderly parents, spending more time with the kids, grandchild, training for a marathon, extensive travel etc). If you have any plausible excuse like the above (dig deep), would probably make things easier. If you really love the work (which apparently you do- that is great!) you can always pick up again in 6-12 months at which time you can renegotiate the role? The problem with the role may well solve itself in the meantime, also- things may change.

I agree with talking to your husband about this. Could you find your own replacement? Or volunteer for an alternative position that you can claim is a better use of your skills?

You may need to come down with Covid and plan to be out for at least a month due to not feeling well and an abundance of caution. Once you've been gone that long they'll fill the role or it will be easier to just fade away!

Over the past 20 years, I have held the same position in for the same organization in several different locations with a few breaks. I recently volunteered in a new location, only to learn the duties here are unsanctioned. I'm not interested in these tasks, nor do I feel I'm a good fit for them. Unfortunately, DH's immediate career could be affected if I back out or call them out on it. Any suggestions of how to politely back away?
