Subject: Mice! Storing Fruit While Ripening?!
We live in attached housing and had mice intermittently for years. Never stored food out. We renovated and now everything is properly sealed and we can leave fruit out again.

Yikes, you need to get rid of the mice. Not only do they eat your food, but they spread disease.
Put everything in the fridge. The banana peels might turn black, but the fruit inside will be fine.
And get rid of those mice. You don’t need to live with them.

You're planning to live with the mice and cage your food?
As PPs said, the exterminator should have closed all points of entry. If there are still some mice in the house, out out live traps baited with peanut butter.
It's not cool to live with mice.

this. if there are holes in your walls, the mice will just keep coming. Find a reputable company (we used Biotech in DC) to come patch all the holes. We haven't seen a single mouse since (10 years).

We had one mouse in the house in 23 years. The pest guy plugged up a hole behind the stove and we've never had one since. Was he not able to find the source of entry?

Whelp, people warned us DC had lots of rats and mice and we they were right.
Turns out we have mice in our house, and the exterminator said put all of our food in containers if we can’t put them in the fridge.
What do we do with tomatoes, bananas, and fruit that isn’t yet ripe? Bowls with mesh lids still allow the scent to reach that little mouse’s twitching nose.
Hanging them still attracts them b/c of the scent.
We all eat a lot of fruit and usually our fruit bowl is brimming over with ripening fruit. Putting them in a brown paper bag will hasten the ripening, but those critters can of course easily gnaw through a bag.
