According to my non-expert understanding based on long ago Chemistry class, gold is safe to eat because it’s inert - it reacts minimally, if at all, to other chemicals. That’s one of the many characteristics that makes it valuable. For example, it won’t react with oxygen to rust or corrode. Basically, unless you choke on it, it should pass harmlessly through your system, coming out as expensive poop.
